This cavernous chamber is buried deep in the earth, shielded from the sun’s harsh rays. And while extreme temperature swings might shock the surface, this space is insulated by tons of packed earth. In these conditions, wine can age gracefully.
Yet there is something about the subterranean that unsettles the mammalian mind. As you descend the countless stairs, you repeat to yourself: “The alcoves house only wine. There is nothing sinister in the dark.”
